1 1/2c AP flour
1/2c sugar
1/2T baking powder
1/4t baking soda
1/4t salt
Cinnamon and nutmeg to taste About 2:1. I judge by smell
1 egg*
1/4c vegetable oil
2 very ripe bananas, mashed to make 1c
1t vanilla extract
Optional: 1/2c chocolate chips and/or chopped walnuts
Preheat oven to 350F.
Combine dry ingredients and spices, whisking vigorously and thoroughly. Add wet ingredients. Mix until just combined and no lumps remain. Pour into greased and/or nonstick loaf pan. Bake 35-40min, or until a toothpick inserted into the center of the loaf comes out clean. May be eaten immediately, but you’ll want to make another. Serves at least 1.
Notes: *Or egg replacement; I prefer Bob's Red Mill, but any good one should do. **May be augmented with applesauce. For pumpkin bread, use canned pumpkin instead of banana, add liquid if necessary, and add ginger and cloves to taste.

1c white sugar
1/2c margarine*
1/2c vegetable oil
2T water
2t vanilla extract
2 1/4c AP flour
1t baking soda
1t salt
1c vegan chocolate chips
Preheat oven to 375F.
Cream margarine and sugar. Add other wet ingredients. In a separate bowl, combine dry ingredients except for chocolate chips. Add dry ingredients to wet ingredients and mix well. Fold in chocolate chips. Chill dough 30 minutes in fridge. Form into ball-shaped balls and bake on a parchment-lined baking sheet for 8-10 minutes. Yields 2-3 dozen cookies.
Notes: *Any margarine which is about 80% vegetable oil (i.e. margarine which says "margarine" on the package and not some balderdash like "vegetable oil stick") will do well. I prefer Earth Balance or Wegman's private label.
